What's the difference between "sit-in" and "sit-on" Kayaks?

Although the names are self-expanitory, different people prefer different kayaks for different purposes and skill levels. A sit-in kayak has a much lower center of gravity - therefore, it tends to be more stable. However, with their enclosed cockpit they also tend to be slightly harder to get in and out of. Because sit-on kayaks have an open deck rather than an enclosed one, they may be preferred by large or tall people, or those with limited flexibility.

Note that both types of kayaks offer models for both beginner and experts. Beginners models tend to be wider, making them more stable (and slower). Expert kayakers often own more than one model depending on whether they plan to fish, drift down a river or ride giant ocean waves next to the folks on surfboards!
